CROSTINI NERI

Ingredients:

  • 300 gr. Minced meat
  • 300 gr. of veal spleen
  • 150 of capers
  • 3 anchovies
  • 1 glass of vin santo
  • extra virgin olive oil
  • parsley, celery and onion

 

Preparation:

  • in a saucepan, put plenty of extra virgin olive oil with chopped parsley, celery and onion … fry together with the minced meat and the spleen.
  • Once cooked, put the well-washed and chopped capers with the three anchovies.
  • Pour a glass of vin santo.
  • Cook again for about twenty minutes.
  • To prepare a real Tuscan black crouton, take a slice of Tuscan bread, toast it and then put it in the warm chicken stock.
  • Once soaked, put a nice layer of meat pate and spleen … the taste of Tuscany will inebriate you
